This is my first video in a series showing you how to make naughty-but-nice confectionery. In this video, I show you how to make lollipops. Mine are Christmas themed, because it's that time of year, but you can make any kind of lollipops, any time of year.

INGREDIENTS & METHOD

Ingredients

450g granulated sugar
225g glucose syrup or light corn syrup
80ml water

A sugar thermometer is essential for this recipe

Method

Prepare a large bowl with water and ice (this is to put the hot pan in to stop it cooking when it’s ready)
Prepare your silicone lollipop moulds with lollipop sticks
Get your sprinkles ready to use.
Add the 3 ingredients to a heavy bottomed aluminum pan
Gently stir them together
Put the lid on the pan and take the temperature up to medium high
Keep the lid on for 4-5 mins to self clean the sides of the pan and stop the sugar from sticking to the sides and crystallising
Take the lid off and continue to boil until the temperature reaches 154 degrees C or 310 degrees F
This should take around 8-9 mins
Take the sugar syrup off of the heat at plunge the pan carefully into the large bowl of icy water.
Be very very careful no one is around and that you protect yourself and your hands
Leave in for 5-10 seconds and then remove
Pour the sugar into a jug and add a few drops of your prefered flavouring - my favourite is bubblegum but there’s loads to choose from
As soon as the bubbles subside start pouring VERY Very carefully into the lollipop moulds
Once all the moulds have been filled drop a few sprinkles on the top or each one
Leave to cool completely before taking each one out and place them individually into a cellophane bag

It’s not nice to make lollipops in hot/humid weather as lollipops get sticky

Christmas is a PERFECT time to make them
